Food and Beer Pairing: Pan Seared Pork Chop with Hair of the Dog’s Fred Ale

Wow! Dumb luck tonight perhaps… or maybe just skill. I hit a home run with this pairing.

So first..

The Food:
Pan seared Pork Rib Chop seasoned with Kirashi, sugar, sea salt and fresh ground corriander seeds served with sauteed garlic spinich!

The beer pairing: Hair of the Dog’s Fred AleABV: 10% IBU: N/A OG: N/A
Beer Style: Scottish Ale I want to say.. cany anyone help verify?

I am feeling a little guilty that I didnt take the time to do a proper reviewing on ol’ “Fred” but I was hungry and was enjoying my dinner a little too much :) . The sweetness of the spice rub really comes thru after taking a bit of the pork and a sip. I am interesting in making this dish again but pairing it with a hoppy beer to see if the bitterness of the IPA can bring out the spiciness of the rub.
